  Steamed Dumplings With Blood Fillings (血馅饺子)

  The steamed blood-filled dumplings were made with chicken and duck blood. There was a mighty general called Wang damosu, the uncle of Emperor Kangxi of the Qing Dynasty, who defeated Li Zicheng and Zhang xianzhong and was regarded as the first valiant fighter in the Qing Dynasty. Every morning after attending the Court,he would ride on the horse-back to run around the city of Beijing. Then he would go to Xidan to eat the steamed blood-filled dumplings. These dumplings were specially prepared for him. For while riding the horse, he would breathe in a lot of dust and dirt into his lungs. And the duck and chicken blood can help keep the lungs clean. However eating animal blood was forbidden after the Japanese occupied North-China. Since then the steamed blood-filled dumplings were almost missing and few people make them now.

米血糕的介绍

  米血糕是指以米和血所做成的汉族特色米食糕点。中国南方多以米食为主,常利用蒸、煮方式,改变米食型态。又因为中国南方“食补”的观念,鸭肉滋阴补虚,昔日农家在杀鸭之后,基于节俭美德,不忍心倒掉鸭血,故以食器盛米和鸭血,蒸熟后沾酱食用。后来流传至民间,渐成为平民小吃,又名“鸭血糕”。然而鸭肉价高,养育费时,鸭血供不应求,而鸡血却又不易凝固,于是渐以猪血取代鸭血,成为“猪血糕”。因此,米血糕是鸭血糕与猪血糕的别称。

  做法

  

  准备猪血糕、香菜、花生粉、海山酱、酱油膏、糖等食材与调味料

  

  猪血糕切块后,放入蒸笼里蒸分钟

  

  酱油膏、海山酱、糖依比例放入搅拌

  

  猪血糕蒸好后,将调好之酱料涂上,再铺上花生粉及香菜装盘
